I Discovered Something…..

Before telling you about my discovery, let me back up to yesterday morning. The New Yorker and I decided to actually *gasp* sit down at the kitchen table and eat breakfast together. That NEVER happens! He’s usually headed off to the gym, and I’m either still asleep, walking out the door to work, or walking back in the door from work. We don’t see much of each other in the AM, so it was definitely a treat for both of us.

We both had oatmeal – The New Yorker’s had brown sugar and peanut butter in his, and mine had honey and peanut butter. We both enjoyed breakfast and were ready for a great day, seeing as how it was 52 degrees out!

I got in a 5 mile run before going into cooking mode. It was a good run, and would have been better if I hadn’t gone out the night before, but I’m in my 20’s, and I wanted to party like it! We had a great night with great friends, and it was the perfect way to ring in the new year.

I had a recipe for broccoli soup that I was dying to try, so I broke out the cookbook, got all of the ingredients together and unpacked the food processor. Ok, The New Yorker unpacked the food processor, but either way, it got done.

After I added everything into the pot and brought it to a boil there was a moment of silence. The New Yorker and I looked at each other, looked at the food processor, and then I called my Mom.

“Hey Mom, can you put hot things in a food processor?”

“Of course, that’s how I make my pumpkin soup!

Problem solved.

Scary.

Once it was all done, I separated it into small containers so that I could grab one and take it to work.

Once it was cooled down, I added Discovery #1: Miso! This stuff is great, and great for you. I used chickpea miso, and could definitely taste it in the soup. I think it really added a nice flavor, not to mention all the great things it was doing for me!

At this point I knew I had to call my friend Kara and see if she wanted to come over for lunch to try out the soup.

Prior to Kara’s arrival for a lunch date today, I went out of a 6 mile run. It was a slow run, but a good one. I was a little lacking in the motivation department, and just before I left I pulled up one of my boards from Pinterest that I call You Can DOOOOOO It!

It took me 63 minutes to finish my run, and I was pretty happy to hit the shower when I got home!

After I was all * squeaky* clean, I picked up Kara for our lunch date. We stopped at the grocery store on the way home and got a couple of things for lunch, one of which was Polenta (discovery #2!). I’ve never tried polenta, but Kara told me to trust her, so I did.

I had 2 avocados at home that had to get used because they were getting preeeeettttyyyy ripe, so we started out with some guacamole

Then, I broke out my broccoli soup and heated it up for Kara

It got great reviews!

Then we finished up with salads topped with the polenta. Kara put them in a pan with some olive oil, and they were delicious!

We put them in our salads, along with avocado #2, some bean sprouts, tomatoes, and greens.

As always, it was a lovely lunch with Kara, and I was bummed when it was time for her to go.

I am proud to tell you that everything that was made/shown in this post was organic. I’m starting to get the hang of this, and really enjoying all of the new foods that I wouldn’t have tried before!
