Holiday Party

Friday night was the Holiday Party for work. Working in a hospital means that no matter what, someone has to work during the party, and isn’t able to go. I was part of that group this year, but luckily we had a great group of nurses on and we had planned our own little party in advance!

I made Cranberry Tea and Chocolate Chex to share with everyone.

The New Yorker helped me out a lot, since right now I’m down an opposable thumb (you really miss those when they’re gone!). The cranberries and cinnamon sticks boiling made the whole house smell delicious!

Within minutes of pouring out the Cranberry Tea, all of the nurses (and even one of the docs!) had asked for the recipe! It didn’t take very long for it to disappear, and I had to push my way through to get some more before it was gone!

 

The chocolate chex are a delicious treat that was introduced to my family by my Aunt Deb. Luckily for me, they are gluten free as well, so they are something I REALLY look forward to!

This is the recipe that I got from the Chex Website

Prep Time:15 min
Start to Finish:15 min
Makes:18 servings (1/2 cup each)
Ingredients:
9 cups Corn Chex
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar
Directions:
1. Into a large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
